We do just as you suggest in this post at my organization.  It is the best way to teach the 7 or in our case eight Wastes (we use DOWNTIME).  We use the Toast Kaizen Video series to do this.  The video intros the training and then we apply the knowledge in an area in the plant.  It has been very effective.  I posted about this here.

This is also a method we use to bring suppliers and customers into the lean thinking process of waste reduction and elimination.
